One of the great revivals of the last 10-15 years is fermentation. There are so many nutritional highlights of fermented food (Crispy Fermented Fish). • Q : Why are you using nitrogen to package Crispy Fermented Fish and Crispy Fermented Fish Paste?

    ANSWER :

Using nitrogen gas is a safe practice widely used in the food industry in order to displace oxygen. Oxygen can carry moisture that could make bacteria grow and thrive on organic material. By removing as much oxygen as possible, bacteria will find it harder to grow. The use of nitrogen makes the packaged food safer and it extends the shelf life significantly. Less oxygen further helps to reduce foul-smelling and inedible food.
Furthermore, nitrogen gas is popular for food packaging (pouches) because it supports a pressurized atmosphere that prevents pouch packages from collapsing.

  • Q : Why does fermented fish sometimes differ in taste or flavor?

    ANSWER :

Fermentation is a complex chemical process, where over time, under certain conditions (e.g. temperature) and the action of enzymes as well as bacteria food’s unique characteristic changes in terms of aroma, flavor, and texture. This change is considered as very healthy and generally good for our digestion.

We guarantee that this complex process is strictly regulated and supervised. Due to the natural process of fermentation is it possible that taste, texture or flavor may differ slightly from time to time. This does not indicate a lower quality. But slightly different taste only refers simply to the natural process of fermentation. We control temperature, time, ingredients, and process steps. But keep in mind that this process cannot be controlled entirely by the number of bacteria or enzymes.
